Light forest fruit cheesecake

Light forest fruit cheesecake using Elevenfit's Forest Fruit Mix . It's no-bake, high in protein, low in carbs, and perfect for healthy desserts. Serves 6-8.

Ingredients 🛒

• 1 sachet of Elevenfit Forest Fruit Mix (9g) 🍇🫐
• 400g 0% fat whipped fresh cheese (or 0% fat natural Greek yogurt) 🧀
• 200g light cream cheese (
• 120g crushed wholemeal or oat biscuits (crunchy base) 🍪
• 40g melted butter (or coconut oil for a fitter version) 🧈
• 150-200g fresh or frozen forest fruits (blueberries, raspberries, blackberries) 🍓🫐
• Sweetener to taste (optional, stevia or erythritol – the Mix already provides sweetness) 🍯
• Optional: 1-2 teaspoons of unflavored gelatin dissolved in 4 tablespoons of water (to make it firmer) ❄️

Steps 👩‍🍳

1. Mix the crushed cookies with the butter until you have a moist dough. Press it firmly into the bottom of a 20-22 cm springform tin or individual ramekins. Refrigerate for 10-15 minutes. ❄️🍪
2. In a large bowl, beat the fresh cheese and cream cheese until smooth and creamy. Add the entire packet of Mixed Forest Fruits and stir vigorously—the deep purple color and forest flavor are amazing! 🌿🫐
3. Puree half of the berries (about 100g) and stir them into the cream for added texture and natural flavor. If using gelatin: heat it with water, mix well, and add it now.
4. Pour the cream over the chilled base. Smooth the surface and decorate with the remaining berries (whole or crushed for a more sophisticated touch). 🌟🍇
5. Refrigerate for at least 4 hours (ideally overnight) for perfect setting. ⏳❄️

Per approximate serving (1/6-1/8): 180-230 kcal, 14-18 g protein, low carbs and almost zero added sugar 😍💚
